I wanted to make a Sonic the Hedgehog game. Does anybody know how to create a side-scrolling background that will encompass 2+min of gameplay like SEGA created sonic games?

I'm not sure who has already made a fully functioning side-scroller. The one scenario that I have seen that actually features side scrolling would not be close to large enough for a game like Sonic the Hedgehog.

What do you mean "it won't be large enough"? Sidescrollers (well, not until you get to stupidly big numbers which won't be affecting you) don't have a maximum size... Also there are many scenarios featuring sidescrolling...

Maybe try this scenario: http://www.greenfoot.org/scenarios/3040 This I pretty good! I've already created a game with this Scrollworld.

It might be better, if you'd take a look at the documentation of this scenario. There you can see explanations of all the methods.
