The turtles eat lettuce and bugs, and get points accordingly. The snakes kill the turtle, so you want to try to get 200 points before the snake gets your turtle. The turtle will move by itself, but you can also make it turn using the right and left arrows, or move more quickly forward or backwards by using the up and down keys.
